How to enjoy it

Let the hot liquid cool slightly. Hold a shell and gently draw out the meat through the opening, or use a small pick if easier. Discard the shells and hard lids; do not bite the shells or forcefully suck in hot broth.

A useful check

Contains molluscs. Soy sauce can add soy and wheat; beer may contain gluten, and oyster sauce adds molluscs. Cooking wine may be used. Eat only thoroughly cooked snails, never raw or undercooked. Watch for shell fragments, hard lids and hot liquid.

How it may vary

The chilli level, herbs and cooking liquid vary across Hunan. This version uses perilla and beer; some use water or stock. Soy sauce, oyster sauce, garlic sauce and five-spice powder may be added. Stuffed-snail regional versions are different preparations.
