Fuliji braised chicken: a place name carried by craft

The name Fuliji ties this braised chicken to a town in Suzhou. A national geographical-indication standard for the product was published in 2006 and took effect in 2007; the craft entered Anhui’s provincial intangible-heritage list in 2008. The preparation passes through more than ten stages, including shaping the bird, drying it, brushing on malt syrup or honey water, frying, and braising it with spices. The sequence helps explain the finished chicken’s golden skin and carefully folded form.
