Cantonese Beef Offal Soup

广式牛杂汤Guǎngshì niúzá tāng

Guangzhou-style mixed beef offal simmered with aromatics

A Guangzhou soup of mixed beef offal, commonly including tripe, intestine and lung, simmered in an aromatic broth. Its appeal is the contrast between springy and tender cuts. Pickled radish and chopped chives may add tang and freshness; the assortment varies by shop.

How to enjoy it

Use chopsticks for the offal and a spoon for the broth. Ask which cuts are included and choose smaller, softer pieces if you prefer less chewing. Let a spoonful cool before tasting.

A useful check

Some cuts remain chewy. Check the broth, pickles and sauces for ingredients relevant to your allergies or dietary restrictions; a plain-looking soup does not establish their absence.

How it may vary

The beef offal and bone broth are neither vegetarian nor vegan. White pepper can taste pungent even without chili; ask about chili in the broth and keep added chili sauce separate if desired.

Story & history

Guangzhou beef offal soup: from handcart to neighborhood shop

Beef offal became a filling street meal in Guangzhou. In the Jinhua neighborhood, Zhang Jie began selling her soup from a handcart near Jinhua Temple in 1991 and moved into a shop in 2013. Longtime customers remembered buying bowls for family meals. This route from handcart to neighborhood shop is one strand of Guangzhou’s everyday food culture.
