A CLOSER LOOK

How to recognize it

A thin dark-brown liquid. Its appearance alone does not distinguish it from other dark sauces or vinegars.

In the kitchen

Adds acidity and aroma to oyster misua and other dishes; used in cooking or added to taste.

Recipes vary: brewed vinegar may be blended with sugar, salt, vegetables, fruit juice and spices. Some products contain soy sauce and wheat. Check the label; this is not automatically the same product as Zhenjiang vinegar.
