How to recognize it

Often dark brown. Check the label for sweet vinegar: color alone cannot distinguish it from unsweetened black vinegar or soy sauce.

In the kitchen

Simmered with ginger and pork trotters, often with eggs. Some recipes blend it with a sharper vinegar.

Ingredients and sweetness vary by maker. Rice vinegar, sugar and spices occur in commercial versions; check the specific label rather than assuming one formula.
