A CLOSER LOOK

How to recognize it

Pale, irregular fatty pieces may retain thin membranes. Once chopped, appearance alone cannot reliably establish which part of the animal the fat came from.

In the kitchen

Chopped into small pieces and mixed with rice, sheep liver, heart and seasonings for Xinjiang rice sausage.

Trimming and piece size vary. Intestinal fat is distinct from tail fat, kidney fat and rendered sheep fat.
