How to recognize it

Fresh sprigs have small oval leaves growing in opposite pairs. Dried oregano consists of crumbled leaves.

Used in sauces, marinades and stews, including some red-wine oxtail preparations.

Fresh and dried forms differ in intensity. Oregano is not a general name for every herb in a mixed seasoning; check the blend when needed.
