How to recognize it

Tongxin examples have stout elongated bases tapering into green leaves, with red to reddish-brown outer sheaths.

In the kitchen

Chopped into the beef-ball mixture of one Wuzhong tangwanzi version, or simmered with meat for an onion-like aroma.

Local cultivated forms vary. This is the Ningxia culinary ingredient called hongcong, not a guarantee that ordinary shallots or red onions are equivalent.
