A CLOSER LOOK

How to recognize it

Fresh curds separated from whey, including curds made from milk remaining after butter production in Tibetan dairying. They are not dried hard chura.

In the kitchen

Used in milk-curd steamed buns and mixed with tsampa or butter and sugar.

Moisture, acidity and milk source vary; do not assume every batch is pure yak milk. Contains milk; fresh curds and dried milk curds behave differently in cooking.
