Story & history
Why Grilled Cold Noodles Are Served Hot
Despite its name, kao leng mian is served hot. Mishan has a charcoal-grilled tradition, while the familiar Harbin version cooks a noodle sheet and egg on an oiled hot plate. Onion, coriander, sugar and vinegar join the sauce; sausage is optional. The chewy sheet and sweet-sour or savory-spicy sauces make it a flexible street snack.
