Airen steamed glutinous-rice cake

矮人松糕Ǎirén sōnggāo

Steamed glutinous-rice cake with salted pork fat and osmanthus

A Wenzhou steamed cake named after short-statured vendor Gu Jinfang, who sold it from a street stall in the 1940s. Fresh glutinous rice is water-milled to a fine flour, mixed with prepared pork-fat pieces, sugar and osmanthus, then steamed and cut into squares. Soft, sticky and sweet-salty, it is a Lucheng district intangible-heritage snack rather than a generic songgao.
