How to recognize it

In the kitchen

Sheep lung is used for mianfeizi, the filled-lung component served with rice-stuffed intestine in Urumqi.

The washed and filled lung is boiled until soft and sliced. This process gives it a pale appearance; the rice-filled intestine served separately is a different organ.
