How to recognize it

May be clear or cloudy and pale gold to brown, with varying fat content. Appearance alone cannot identify the meat or seasonings.

In the kitchen

Used as a soup base, including some versions of Beijing mung bean-flour ball soup. It contributes animal-derived flavor even when the solid ingredients are plant-based.

Meat species, bones, aromatics, salt and preparation vary. It is not vegetarian or vegan; confirm the actual recipe for dietary or allergy needs. Not interchangeable in identity with a specifically named chicken, beef, bone or clarified stock.
