Type

A CLOSER LOOK

How to recognize it

Usually a brown, thickened sauce. It is not pure abalone juice and is distinct from abalone meat or a can of whole abalones.

In the kitchen

Used in cooked gravies, glazes, stir-fries and noodle sauces.

Recipes differ. Commercial versions may contain abalone, scallop or oyster extracts, soy sauce, sugar and starch. Fish, shellfish, soy and wheat may be present; check the label. Do not assume it is vegetarian.
