Story & history

Zhengding Ma-Family Braised Chicken

Local history traces the dish’s arrival in Zhen Ding to a Hui Muslim family named Ma from Anguo around the Ming–Qing transition. In 1869, Ma Luofa named the family’s inherited braised chicken “Ma Family Braised Chicken” and opened the Ma Family Old Chicken Shop in Zhen Ding Fu, now Zhengding. The named preparation was included in Hebei’s second provincial intangible cultural heritage list in 2007.
