A CLOSER LOOK

How to recognize it

Much smaller than chicken eggs. A plain cooked egg has a white exterior and yellow yolk; shell color and speckling vary.

In the kitchen

Often boiled and peeled before further seasoning. Ask “这是鹌鹑蛋吗?” (“Is this a quail egg?”). Broth, sauces and marinades may add other ingredients.

Contains egg and is not vegan. Seasoned versions differ from plain eggs; check additional allergens and ingredients rather than assuming all versions are the same.
