A CLOSER LOOK

How to recognize it

Usually a moist, finely crushed green to olive-green paste. It is a prepared condiment, distinct from fresh chive leaves, stalks or flowers.

In the kitchen

Used with boiled lamb, Beijing lamb hotpot and some pork dipping sauces; it may be mixed with sesame paste and fermented tofu.

Recipes and added seasonings vary. Check the finished sauce separately for sesame, soy and other ingredients; the name alone does not identify the whole sauce.
