A CLOSER LOOK

How to recognize it

Look for slender, curled dry leaves. Their coiled form differs from the flat leaves of Longjing tea; appearance alone does not establish a packet’s origin or grade.

In the kitchen

Brewed as tea and used to give Biluochun shrimp its tea aroma.

Leaf shape and brewed character vary between batches. The infused leaves may also be used as a garnish in the shrimp dish.
