A CLOSER LOOK

How to recognize it

A fine, dry powder, often yellow to golden-brown, with mixed spice aromas. It is not a ready-made liquid curry sauce.

In the kitchen

Added to beef broth for curry beef glass-noodle soup, or cooked into sauces and other savory dishes.

Blends may include fenugreek, garlic or chili. Hotter and milder versions differ, so the name alone does not establish chili heat.
