A CLOSER LOOK

How to recognize it

A concentrated water solution containing glucose and other starch-derived sugars; the source crop is not fixed by this name.

In the kitchen

Sweetens confectionery and contributes body and chewiness, including the labeled Nanguo coconut candy.

Not the same as pure glucose powder, maltose syrup or high-fructose syrup. Corn, wheat or tapioca may supply the starch; check the supplier rather than assume a crop.
